Julie's Jamaican Oxtail Stew

Main Dishes
 1/3 cup dried small white beans
1 tablespoons vegetable oil
3 lb beef oxtails
3 garlic cloves (crushed)
1 medium yellow onion (diced)
1 medium tomato (diced)

2 cups canned beef stock (best but not nec.)
2 cups water (approximately)
2 tablespoons freshly ground allspice; or salt; to taste
Black pepper, freshly ground
Tabasco sauce (to taste)

 

Place beans in a small saucepan. Add 1 cup of the water, bring to a boil, covered, then turn off the heat. Allow to sit for 1 hour, covered, then drain.

Brown the oxtails well in the oil. Place the oxtails in a 6-quart stove-top casserole.

Add the garlic, onion and tomato. Add the beef stock and enough water so it just covers the contents of the pot. Add the allspice, salt and pepper.

Cover and simmer for 3 1/2 hours, adding the drained beans after 1 1/2 hours. Stir occasionally.

Remove the lid during the last hour of cooking if you want a thicker sauce. Be careful the pot does not dry out. Season with salt, pepper and
Tabasco sauce.

Julie's Quick Baked Scallops

bay scallops
mayonaise
crab meat (cut crab sticks)

Place 3-4 bay scallops in open sea shell (any shell) and top with cut crab meat.  Layer a generous icing of mayonaise on top of crab meat topping.  Broil on low for 5 minutes.  Then continue to broil on high for 2 minutes.

 
Moist Meatloaf

Julie's Moist Meatloaf  (2-3 adult servings) 

1 pound ground beef
2+ teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes with juice
1/2 cup Quaker (quick-cooking) oats 

Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon dijon mustard
1 tablespoon of Worchestershire sauce
1-2 teaspoons of cumin powder
1 tablespon honey  

Preheat oven to 350 degrees F.Mix all meatloaf ingredients well with gloved hand and place in a baking dish. Shape into a loaf. Topping: Mix ingredients for topping and spread on loaf. Bake uncovered for 1 hour.
